Creamy and spicy this Jalapeno Bacon Egg Salad is great to bring along to a picnic, full of creamy goodness it’s a delicious and addicting sandwich!
I love egg salad. Or I just love eggs in general. I actually birthed a son who absolutely hates eggs….I can’t fathom how people cannot like them, but this child doesn’t and it’s foreign to me.
But regardless I still love the little dude and will continue on to try to make him like eggs, I’m believing it will be done one day. I have faith that this is doable! You couldn’t even imagine all the foods I used to hate that I now love!
Growing up my mom made a lot of egg sandwiches. Fried egg sandwiches were her specialty! If you’ve never had a fried egg sandwich its pretty much scrambled eggs all pressed together to create a patty of sorts, placed on bread and topped with ketchup.
I know it probably seems off-putting to some, but it’s so good! Like seriously, think college day budget good! Some of the best meals were the ones where we had to create with the little food we had! Holla, I know some of you know what I’m talking about!
Ketchup on toast anyone? Oh how about we add a little ranch…it was done, many, many times. Probably more that I’d like to admit!
Continuing on with my ever so lovely egg conversation, we also adore deviled eggs. My husband makes these great jalapeno bacon deviled eggs which made me want to make them into these Jalapeno Bacon Egg Salad Sandwiches!
Crispy jalapeno and bacon totally make this sandwich, I’m not sure if I’ll ever go back to being a normal egg salad eater. But I might be a little bit biased as I love bacon (who doesn’t) and jalapeno combo to begin with!
If you have some get togethers or picnics coming up, these are an amazing option to be able to bring! Just wrap them up and go! You could also stuff a loaf of french bread and slice off as much as you desire.
Jalapeno Bacon Egg Salad
Ingredients
- 10 eggs hard boiled
- 6 strips bacon cooked and crumbled
- 1 jalapeno diced
- 3/4 cups mayo
- 1 tsp rice vinegar
- 1 tsp mustard
- 1 Tbs sugar
- Salt and pepper
Instructions
- Chop your hard boiled eggs and add to a bowl.
- Stir in your jalapeno and bacon.
- Mix in mayo, vinegar, mustard, sugar and salt and pepper.
- Refrigerate until chilled.
- Serve on buns, bread, or in a wrap.
