Hearty and tasty this Chicken Tortilla Casserole is an easy family-friendly dish that whips up quickly, and feeds a crowd!
Around our house we are always looking for new ways to use chicken. This Chicken Tortilla Casserole is one of our favorite quick and easy dinner meals that we make over and over again.
Not only is it hearty, its full of ALL THE FLAVORS! We love it so much and our kids do too so we keep it on the rotation at least once a month.
WHAT IS A CASSEROLE?
A casserole or as we call it here in the midwest is actually referred to the actually cooking pan itself. The casserole dish is a deep dish that cooks food slowly in the oven.
Casserole was termed for these dishes because of the way in which they were cooked. So casserole can be anything that you mix together and bake in a casserole dish.
WHAT IS IN CHICKEN TORTILLA CASSEROLE?
- Shredded chicken
- White corn tortillas
- Cheese
- Onion
- Sour cream
- Milk
- Green chiles
- Additional add in’s include: diced tomatoes, red pepper and jalapeรฑos
HOW DO YOU MAKE CHICKEN TORTILLA CASSEROLE?

Preheat oven to 350.

In large bowl mix together cream of chicken soup, onion, sour cream, green chiles, milk, salt and pepper.

Spray a 9″x13 casserole dish with non-stick cooking spray and spread half of your tortillas to line the bottom of pan.

Top with half of your shredded chicken.

Top with half of your cheese.

Pour half of your sour cream mixture over that.

Layer again with tortillas, then chicken, then remaining sour cream mixture then finally spread remains cheese over top.

Cover with tin-foil and bake for 1 hour.
While I stated earlier that this is one of our favorite dishes to make, it really does feed a crowd. It is one dish that would be good to bring to a picnic, potluck or any sort of get together. It is a basic, and tasty recipe that really goes over well.
You know when you have that person who brings that one casserole to something and it’s always a staple and people are wanting the recipe? This is that type of recipe.
One that is perfect to serve to everyone because its quick and easy and doesn’t use a lot of ingredients that people don’t normally consume. Its a perfect dish for picky eaters!

Ingredients
- 3 large chicken breasts cooked and shredded
- 2 10 oz cans cream of chicken soup
- 1 medium onion diced
- 2 cups sour cream
- 1 4 oz can diced green chiles
- 1 cup milk

- 12 small white corn tortillas cut into 1" squares
- 1 lb cheddar or Colby jack cheese shredded

Very good! My hubby liked it better than traditional enchiladas! But I think it needs more tortillas! I even cooked them in oil before adding them to the casserole, they were still a little mushy and not much corn tortilla flavor! But overall, a 9 outa 10! Will be making again!
