Has school started where you live yet? We have another 2 weeks until kids go back around these parts and we are making the most of the time we have left together with the quietness because in a few short weeks we will be busy as all heck!
Secretly I’m kinda excited for school to start, just for the simple fact that our lives here at home all summer long ain’t perfect. Although I wish I could say that we have all the fun in the world doing crafts, going outdoors, planning all these outings, but in all honesty it doesn’t happen people.
I applaud myself when I can get my kids up before noon and we can all get out of our pajamas for the day. Heck I haven’t gotten my mail in a week. A WEEK!!! And we live 1 whole block from the post office. I mean seriously…I could just go get it, but these kids are my priority, not the junk in the mail that I don’t want to see.
I’ll be the first to admit that my life is messy, imperfect and I have made mistakes just like most of us mom’s have. I’ve left the house in no shoes, I sometimes don’t brush my daughter’s hair when we go out and I choose what battles to fight when it comes to my kids and their clothing choices. But we are all happy and alive, so that counts right?
One thing that I’m certainly not ashamed of is whipping out a Red Baron Pizza every now and again because even know I’m a food blogger, guess what…I like the ease of not having to whip up an elaborate meal every night of the week. My kids love pizza and are seriously satisfied when I make them it…sometimes even more so then when I do take that extra time and whip up something elaborate.

Just all you kick butt moms out there, the Baroness is a take no prisoner type of gal. Just the littlest things it takes to get everyone together to enjoy one another’s company goes a long way.
Now since I’m a mom who loves all things quick and easy what better way to enjoy our Red Baron Pizza then with the perfect Cheesy Pesto Garlic Bread to go along side it? Whips up in no time and is absolutely the most perfect accompaniment to the meal, no doubt!
Grab yourself a loaf of French or Italian bread and slice it down the middle. Mix together a sick of butter, some minced garlic and garlic powder and give it a spread over each side of your bread.Then lather that sucker with some yummy pesto, go on don’t skimp on the stuff either, trust me when I say that garlic butter and pesto are magical together. And last but NOT least, the crowning jewel of the recipe is the mozzarella cheese!! Layer a whole bag of mozzarella cheese on top and bake.
Need I really say more about this? My kids are pesto lovers so I never have any issues getting them to down the green stuff. If your kids are afraid of the green, then the cheese is a perfect incognito layer to cover the fact that there is something a little different about this cheesy bread then most!

Cheesy Pesto Garlic Bread
Ingredients
- 1 loaf French or Italian Bread cut lengthwise
- 1/2 cup butter softened
- 2 tsp minced garlic
- 2 tsp garlic powder
- 1/2 cup basil pesto
- 1 8 oz bag shredded mozzarella cheese
Instructions
- Preheat oven to 400.
- Mix together your butter, minced garlic and garlic powder and spread on cut side of each slices of bread.
- Brush with pesto and sprinkle with cheese.
- Bake for about 15 minutes or until cheese is melted and bubbly.
