So I promised to bring you guys some more breakfast recipes this year! Well, this Southwest Avocado Toast is seriously one of my favorite breakfasts! Technically it can be eaten at any meal, but since it has eggs I primarily eat it for breakfast.
Not saying that you have to, just saying it’s an option. I’m the brinner type of gal, so I actually eat this all day long. I’m kinda slightly addicted. But I’m fully addicted to avocado. I will eat avocado on ANYTHING! Like give me guacamole and I’ll eat it with a spoon.
That’s totally not weird at all right? Ok anyways, I’m not sure but avocado toast has been on the trend lately. I mean there are so many ways to eat it. Like avocado, bacon and tomato…um yes. Avocado, hummus and cucumber…need to try! And avocado tuna melt?!?! Say what?!
So with my Southwest Avocado Toast it’s just a no frills recipe with some most basic ingredients that I’m sure are in your pantry right now. See, I’m the type of girl that likes to keep things as quick and easy as humanly possible. I’ve got 4 hungry mouths to feed in my house, so anyone who has kids know’s that getting things on the table as quick as possible is key.
This toast is so delicious even my most picky of eaters actually wanted a whole one to himself. I was seriously so surprised at this. He is literally the worst at eating anything. He asks what certain things are and he tells me he doesn’t like it. Ugh, so frustrating. I at least make my kids take one bite to try something before they totally dismiss it.
I think the kiddo was happy that I made him try this. Because he just devoured it. Even my ever hating avocado husband truly enjoyed this! I’ve just got a tough crowd at my house so winning them over with my meals always feels like the best of accomplishments like EVER!!
So if you have a few minutes in your morning when you’re not rushing out the door, you want a delicious twist to your normal cereal, pancake or waffle routine then this Southwest Avocado Toast is right up your alley! It’s a fun, easy savory breakfast that you’ll want to keep on your breakfast rotation.
Southwest Avocado Toast
Ingredients
- 2 pieces bread toasted
- 1 avocado peeled and seeded
- 2 tsp cilantro plus more for garnish
- Juice of 1/2 lime
- 1/4 tsp cayenne powder
- 1/2 tsp red pepper flakes
- Salt and pepper
- 2 eggs scrambled
- Salsa
Instructions
- In bowl mix together your avocado, cilantro, lime, cayenne, red pepper flakes and salt and pepper and stir until mashed.
- Spread half mixture on each of your pieces of toast.
- Top with your scrambled eggs and desired amount of salsa.
- Garnish with cilantro if desired.
