It is the first day of Summer! If you’re anything like me you’ve been calling it Summer long before now. The weather is starting to get warmer, the kids are out of school and you are just so excited that it is time for cookouts, grilling and so many outdoor activities!
With Summer comes entertaining and that is something we absolutely love to do. We throw a lot of game nights in the winter and now that the weather is actually pleasant and we don’t have to batten down the hatches to stay warm it has progressed in the bonfire nights and snacktopia!
We also don’t want to make it any more hot in our house than we need to, so snacks that require minimal prep and not having to turn on our oven is key.
That’s why I’m so excited about these easy, tasty Strawchebaliscuit Bites. Ripe and sweet strawberries, soft goat cheese, a sweet and tangy balsamic reduction and sliced basil top crispy crunchy TRISCUIT Crackers making this a perfect no fuss Summer appetizer.
I headed to my local Walmart and picked myself up a box of the Original TRISCUIT Crackers along with their new Artisanal TRISCUIT Mediterranean Olive variety!
I can’t believe some of the flavors that they have, seriously delicious! While there I picked up all the other ingredients for this recipe. I’ve been so addicted to cooking and baking with strawberries this year that I had to make a recipe with strawberries where there was no baking or cooking involved!
Now we looooooove hand-held snacks in the Summer and these are so tasty and super simple to make and take no time at all.
The most time you’ll take is making the balsamic reduction, but that takes maybe 10 minutes and you’re set to go to build your Strawchebaliscuit Bites.
These tasty little treats are made from the Original TRISCUIT Crackers and topped with a smear of goat cheese, a slice of strawberry, a little delicious drizzle of your balsamic reduction and sprinkled with crisp basil.
Tell me how it can get any easier and be any more tasty than that!
Our kids even loved these! I think they will eat anything with strawberries on them so it is a win either way. Let’s just say that at the end of the day, there was not a single one of these Strawchebaliscuit Bites left on the plate! Woo-hoo, mom for the win on that one.
What makes these little treats great is that they have the crisp bite that the TRISCUIT Cracker provides and then it gives way to a creamy, fruity and tangy burst of flavor in your mouth. Seriously amazing textures come together in this appetizer.

Strawchebaliscuit Bites
Ingredients
- 1 Box Original TRISCUIT Crackers
- 1 4 oz pkg goat cheese
- 6-7 strawberries sliced
- 1/2 cup balsamic vinegar
- 2 Tbs sugar
- 1/4 cup sliced basil
Instructions
- In sauce pan add your vinegar and sugar and bring to boil on medium-high heat. Reduce to medium and simmer until vinegar reduces by half, remove and let cool.
- Once reduction is cool assemble crackers by spreading each TRISCUIT Cracker with about 1/2 Tbs goat cheese, top with sliced strawberry, drizzle with balsamic reduction and sprinkle with basil.
- Serve and enjoy!

Hi Monica, I know a few people who don’t like goat cheese either! Any good soft cheese like marscapone, cream cheese or even ricotta would go nicely.
