HOW TO MAKE EASY CHOCOLATE TRUFFLES, STEP BY STEP:
- Place the chocolate chips in a medium-sized heat-safe bowl, set aside.
- Add the heavy cream to a small microwave-safe bowl. Microwave for 30 seconds, stir Continue to microwave in 15-second intervals, stirring in between until the cream reaches 180 degrees F. Test it with a food thermometer. Or you can use the stove top and heat to 180 degrees F in a small saucepan.
- Pour the hot cream over the chocolate. Let it sit for 5 minutes. Add the vanilla and whisk to combine. It will take a minute or two to come together.
- Let cool to room temperature, about 30 minutes, and place in the refrigerator to harden, 1-2 hours. You know itโs ready when you can scoop it out and roll it between your hands.
- Place your coatings into small bowls.
- Roll Tablespoon-sized portions of the truffles between your hands then immediately place the ball into the coating of your choice.
- Roll it around until it is coated then place them on a sheet tray or plate. Continue with the remaining truffles.
- Place back in the refrigerator for 30 minutes before serving. Keep any leftovers in the refrigerator.
WHAT ARE THE BEST CHOCOLATE CHIPS TO USE?
You really want to use a higher quality chocolate chip for this recipe such as Ghirardelli, Guittard, Nestle. etc.
You can also switch the flavor of the chocolate if you’d like depending on what you want sweeter or more bitter. So use milk or dark chocolate chips if you choose.
HOW LONG DO THESE NEED TO CHILL FOR?
All together between the making of the truffle mixture and the forming of the truffles you will want everything to chill for roughly 2 1/2 hours.
This ensures that the truffle mixture is set enough to form and that after forming the truffles are cool enough to keep their shape.
WHAT OTHER COATINGS CAN I USE?
Like mentioned before, the coatings are absolutely endless when you think about it. Some of our favorites besides what we have in this recipe include:
- Sprinkles
- Crushed Candy Canes
- Chopped Up Candy
- Cocoa Nibs
- Toffee Bits
- Toasted Coconuts
- Mini Chocolate Chips
- Crushed Cookies
Whatever flavor you are looking for, you can get. And don’t stop at just one – make a variety!
CAN I FLAVOR THE TRUFFLES WITH OTHER EXTRACTS?
Absolutely, we kept these Easy Chocolate Truffles basic with a vanilla extract which we love.
Some other extracts you can use include: almond, mint, or orange. But use whatever you like!
HOW TO STORE:
These can be stored in an airtight container at room temperature for up to 1-2 days or in the refrigerator where they will keep for up to 2 weeks.
They can also be frozen, place in a freezer container and they will keep in the freezer for up to 3 months.
To defrost, remove to the refrigerator overnight or until thawed. You can then move them to the countertop to come to room temperature if you like.
TIPS AND TRICKS:
- Make sure you are using a high quality chocolate chip.
- You can also use a chocolate bar if you’d like.
- Various toppings can be used, see above for other ideas.
- These will need to chill in total roughly 2 1/2 hours.
- You can use milk or dark chocolate if you wish to have them more sweet or btter.
- Other extracts can be used, see above for some ideas.
- These can be frozen, see above on how to do that.
- Easily double this recipe to serve more people or to save for later.
- If the chocolate doesnโt fully melt when mixing in the warm cream, pop the whole thing in the microwave for 15 seconds and whisk again. One time should do it.
- I like to use a tablespoon-sized cookie scoop to keep the truffles uniform in size.
- You can also dip these in tempered chocolate or candy coating. Before doing so, make sure to freeze the truffles so they will not melt in the coating while dipping.
