I’m a huge meatloaf fan. I mean huge. I never knew that there were actually people out there who despised meatloaf! I mean come on! It was so weird, but I mean to each their own! I think that a tasty hunk of meat cooked until golden brown is the absolute perfect way to end my day.
I know my analogies are absolutely horrible, it’s ridiculous. I have always made a brown sugar meatloaf, its been a favorite in my family for the longest of times. I have this addiction to savory sweet dishes, if you haven’t really ever had sweet with your savory then you’re seriously missing out.
Ok so since I only had a pound of hamburger defrosted I figured I’d make a smaller version of our favorite and came up with this Bacon Brown Sugar Mini Meatloaf! Who doesn’t love individual, personalized servings for just themselves? I know my kids go crazy!
These are super simple to make and cook up quicker than the normal meatloaf since obviously they are smaller! If you’ve got yourselves muffin tins, then you’re set! If brown sugar and bacon aren’t your flavor, you can definitely switch these bad boys up to fit your profile.
Bacon Brown Sugar Mini Meatloaf
Ingredients
- 1 lb ground beef
- 1 small onion diced
- 1 egg
- 1/2 cup bread crumbs
- 1 tsp pepper
- 1/4 cup milk
- 1 salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/3 cup cooked chopped bacon
- Ketchup
- Brown Sugar
Instructions
- Preheat oven to 350.
- In bowl mix together your ground beef, onion, egg, bread crumbs, milk, salt, pepper, garlic powder and bacon.
- In a 12 count muffin tin fill the wells with the ground beef (I got around 8).
- Top each with about 2 tsp each ketchup and brown sugar.
- Bake in oven for 25-30 minutes.
- Let cool slightly before removing from tin.

That would be perfectly fine. Anything that has an onion flavor would work. Chives, green onions, shallots, etc.
