Pea Salad with Bacon

For the dressing:
- 1 cup mayonnaise
- 2 Tablespoons sour cream
- 2 Tablespoons reserved bacon grease
- 1 Tablespoon lemon juice fresh squeezed
- 1 Tablespoon granulated sugar
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
For the salad:
- 36 ounces frozen peas thawed
- 8 ounces colby jack cheese small diced
- 2 green onions thinly sliced
- 6 ounces bacon small diced, cooked crispy
In a large bowl, whisk together the mayonnaise, sour cream, bacon grease, lemon juice, sugar, garlic powder, onion powder, salt, and pepper.
Add the peas, cheese, scallions, and cooked bacon to the bowl. If you prefer to keep the bacon as a garnish, set it aside until serving.
Stir everything together well, then serve or chill until ready to serve.
- You can add diced ham to this for a ham and bacon combination.
- You do not have to use the bacon grease, see above.
- Other cheese's can be used, just make sure they are a block cheese.
- Easily double this recipe to serve more or to save for later.
- If you let this chill before serving, give it a good stir first.
