Ingredients

For the dressing:

  • 1 cup mayonnaise
  • 2 Tablespoons sour cream
  • 2 Tablespoons reserved bacon grease
  • 1 Tablespoon lemon juice fresh squeezed
  • 1 Tablespoon granulated sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper

For the salad:

  • 36 ounces frozen peas thawed
  • 8 ounces colby jack cheese small diced
  • 2 green onions thinly sliced
  • 6 ounces bacon small diced, cooked crispy

Instructions

  • In a large bowl, whisk together the mayonnaise, sour cream, bacon grease, lemon juice, sugar, garlic powder, onion powder, salt, and pepper.
  • Add the peas, cheese, scallions, and cooked bacon to the bowl. If you prefer to keep the bacon as a garnish, set it aside until serving.
  • Stir everything together well, then serve or chill until ready to serve.

Notes

  1. You can add diced ham to this for a ham and bacon combination.
  2. You do not have to use the bacon grease, see above.
  3. Other cheese's can be used, just make sure they are a block cheese.
  4. Easily double this recipe to serve more or to save for later.
  5. If you let this chill before serving, give it a good stir first.
  6. Other vegetables can be used in the recipe as well, see above for some ideas.
  7. We do not recommend freezing this recipe.
