Pancake Tacos

Fluffy pancakes, greek yogurt and fruit make these Pancake Tacos a hit for breakfast! Kid and adult approved.

Ingredients

  • 1 ½ cups all-purpose flour
  • 4 teaspoon baking powder
  • ½ teaspoon fine sea salt
  • 2 Tablespoons granulated sugar
  • 1 ⅔ cup buttermilk
  • 1 large egg
  • ¼ cup unsalted butter melted
  • 1 teaspoon vanilla extract

Toppings:

  • 2 cups vanilla Greek yogurt
  • 2 cups assorted small-diced fruit
  • Powdered sugar
  • Chocolate shavings optional
  • Chocolate sauce optional

Instructions

  • In a large bowl whisk together the flour, baking powder, salt, and sugar, set aside.
  • In a medium-sized bowl, whisk together the buttermilk, egg, butter, and vanilla until smooth.
  • Add the wet ingredients to the dry and stir together until combined, do not overmix, some lumps are okay. If it seems too thick add a splash more of buttermilk. Let the batter sit for 5 minutes.
  • Place a nonstick skillet over medium heat. Spray lightly with cooking spray. Pour ¼ cup of the batter onto the skillet and spread it out.
  • Cook 3-4 minutes or until bubbles rise to the surface and burst, flip the pancake and cook on this side until golden brown.
  • Repeat with the remaining batter.
  • To serve, add ¼ cup of Greek yogurt, some fruit, and a dusting of powdered sugar. Add chocolate shavings and chocolate sauce for dipping, optional.

Notes

  1. The powdered sugar, chocolate shavings and chocolate sauce are not included in the nutritional value.
  2. Easily double this recipe to make more.
  3. Make these into savory Pancake Tacos, see above on my suggestion on how to do that.
  4. You can use any of your favorite fruits for this recipe.
  5. The pancakes themselves can be frozen for up to 3 months.
  6. Switch up your yogurt, see some flavor ideas above.
  7. Make sure that you use Greek yogurt, it is thicker and will not drip out of the recipe.
  8. Drizzle with chocolate sauce if you want a more sweet flavor.
  9. Add in some chocolate chips or fruit to your pancakes themselves.
  10. Buttermilk is encouraged but regular milk will do as well.
