In a large bowl whisk together the flour, baking powder, salt, and sugar, set aside.
In a medium-sized bowl, whisk together the buttermilk, egg, butter, and vanilla until smooth.
Add the wet ingredients to the dry and stir together until combined, do not overmix, some lumps are okay. If it seems too thick add a splash more of buttermilk. Let the batter sit for 5 minutes.
Place a nonstick skillet over medium heat. Spray lightly with cooking spray. Pour ¼ cup of the batter onto the skillet and spread it out.
Cook 3-4 minutes or until bubbles rise to the surface and burst, flip the pancake and cook on this side until golden brown.
Repeat with the remaining batter.
To serve, add ¼ cup of Greek yogurt, some fruit, and a dusting of powdered sugar. Add chocolate shavings and chocolate sauce for dipping, optional.
