Homemade Peppermint Patties

Why buy store bought when you can make these easy peasy Homemade Peppermint Patties at home? Minty, chocolatey and absolutely delicious!

Ingredients

  • 3 cups powdered sugar sifted
  • 2 Tablespoons evaporated milk
  • 2 Tablespoons corn syrup
  • 1 teaspoon peppermint extract
  • ½ teaspoon vanilla extract
  • 2 Tablespoons shortening
  • 1 teaspoon coconut oil
  • 1 ½ cups dark chocolate chips or chunks

Instructions

  • Add powdered sugar, milk, corn syrup, extracts, and shortening to a mixing bowl and mix until combined.
  • Roll the mixture into 1-inch balls using a cookie scoop or your hands and place on prepared pan.
  • Flatten each ball into ¼-inch thick, using a spatula, the bottom of a glass, or even the palm of your hand.
  • Chill patties in the refrigerator or freezer for 1-2 hours.
  • Add coconut oil and chocolate to a small heat-proof bowl and microwave for 90 seconds in 15 second increments, stirring between each one until smooth.
  • Using a fork, dip each patty into the chocolate, coating entire thing, then placing back onto baking sheet.
  • Refrigerate until chocolate is set, about 30 minutes.
  • Serve and enjoy.

Notes

  1. Use semi-sweet or milk chocolate chips instead of dark.
  2. The filling can be made ahead of time, see above on how to do that.
  3. Do not skip the chilling of the filling, this is essential so that it doesn't melt when dipped in the chocolate.

  5. Top these with decorations or other ingredients. We listed some ideas above.
  6. If the filling is too sticky to work with, use some powdered sugar to make it easier to handle.
