Chicken Souvlaki

- 1 ½ pounds chicken breasts cubed in 1-inch pieces
- ¼ cup fresh lemon juice
- ¼ cup extra virgin olive oil
- 2 Tablespoons garlic minced
- 1 Tablespoon dried oregano
- 1 teaspoon paprika
- 1 teaspoon sea salt
- 1 teaspoon ground black pepper
- 1 large lemon sliced
- Cooking oil for grill
- ½ cup prepared Tzatziki sauce optional
Add cubed chicken to large freezer bag or glass bowl. Pour oil, lemon juice, garlic, and seasonings over chicken, then toss to coat.
Refrigerate for 30-60 minutes.
While chicken is refrigerating, add skewers to a large pan or dish of cold water and soak for a minimum of 30 minutes.
Remove the chicken from the refrigerator and thread cubed chicken onto skewers, discard remaining marinade.
Preheat the grill to medium-high heat.
Brush grill grates generously with cooking oil to prevent sticking.
Cook for 7-8 minutes, flipping halfway through cook time, or until chicken reaches an internal temperature of 160 degrees F. Remove from grill and allow to sit for 2-3 minutes.
Drizzle optional sauce over top or serve on the side for dipping.
Top with lemon slices and serve.
- Nutritional value includes Tzatziki sauce.
- Make sure you let this marinate for at least 30-60 minutes, even longer if you prefer.
- This can be frozen, see above on how to do that.
- Make sure that you are soaking your skewers in cold water for at least 30 minutes so they don't burn when cooking.

- Make sure that the internal temperature of the chicken is 165 degrees F before you remove it from the grill.
- If you do not have a grill you can make this in a grill pan as well.
