  • ½ teaspoon ground black pepper
  • ½ teaspoon salt
  • 6 six-inch small/fajita sized flour tortillas
  • 6 slices American cheese
  • 1 cup lettuce shredded
  • ½ cup pickles sliced
  • ¼ cup white onion diced

Sauce:

  • ½ cup ketchup
  • ½ cup mayonnaise
  • ¼ cup sweet relish
  • 1/8 cup white onion finely diced
  • 1 teaspoon white distilled vinegar
  • ½ teaspoon ground black pepper
  • ¼ sweet paprika

Instructions

  • Separate ground beef into 6 equal sections, press onto tortilla in a single layer, covering completely, repeat with remaining tortillas. Salt and pepper the top and set aside.
  • Heat a large skillet over medium heat, cook meat side down for 4 minutes pressing down with spatula starting in the middle and working outward. Flip over and then top each with a cheese slice and cook for an additional 2-3 minutes or until cheese is melting and tortilla is crisp.
  • While tacos are cooking, make sauce, add sauce ingredients to a small mixing bowl and whisk until combined.
  • Remove tacos from heat, top with lettuce, pickles, onions, then a drizzle of sauce and serve.

Notes

  1. Nutritional value is using all the sauce, expect a lower nutritional value if not using all the sauce.
  2. Make sure you are using 6-inch tortillas for this recipe.
  3. Higher quality ground beef works best so they are not as greasy.
  4. You can use Thousand Islands Dressing instead of making your own homemade sauce if desired.
  5. We do not recommend freezing this recipe.
  6. Additional toppings, cheese and meats can be swapped or added, see above on some ideas.
  7. Easily double this recipe to make more for a larger crowd.
  8. Serve with fries, chips, onion rings, etc.
