Ingredients

  • 8 slices Texas Toast or thick cut sandwich-style bread
  • 3 Tablespoons butter softened
  • 2 cups (16 ounces) prepared/leftover BBQ pulled pork (we like to use Lloyds)
  • 8 slices cheddar cheese

Instructions

  • Preheat large skillet over medium heat
  • Butter one side of each slice of bread.
  • In the skillet place 2-4 slices of the bread buttered side down in the skillet.
  • Top with 1 slice of cheddar cheese, then ½ cup pulled pork, then additional slice of cheese. Then top with slice of bread, buttered side up.
  • Cook 3-4 minutes then flip and cook an additional 3 minutes or until golden brown and cheddar is melting. Repeat with any remaining slices of bread.
  • Cut in half if desired and serve.

Notes

  1. BBQ sauce is not included in nutritional value. 1/2 cup BBQ sauce adds about 245 calories to the recipe.
  2. Make sure you are using a thicker sliced bread, see above for options.
  3. You can switch up your cheese to whatever you like, we listed some ideas above but make sure you are using sliced cheese.
  4. Homemade or store-bought bbq pulled pork will work with this recipe.
  5. You can also use shredded chicken or turkey.
  6. This goes great with a lot of side dishes, see above for some of our favorites.
  7. If making homemade, use your favorite BBQ sauce.
  8. We do not recommend freezing this recipe.
  9. Easily double this recipe to serve more people.
