Roasted Chicken Thighs

Flavorful and tasty, these Roasted Chicken Thighs make the perfect dinner meal to serve with any of your favorite sides.

Ingredients

  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 ½ teaspoon ground paprika
  • ½ teaspoon ground black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 2 Tablespoons unsalted butter melted
  • 1 ½ Tablespoon soy sauce
  • 3 Tablespoon olive oil
  • 1 Tablespoon lemon juice
  • 5 chicken thighs bone in and skin on
  • Chopped parsley optional

Instructions

  • In a large bowl, combine melted butter, soy sauce, olive oil, lemon juice, garlic powder, onion powder, paprika, pepper, basil, oregano, and rosemary.
  • Place the chicken thighs in the bowl and use a rubber spatula to move the chicken around and get the marinade evenly coated over all the thighs.
  • Cover the bowl with a sealable lid or plastic wrap and place in the refrigerator. Let the chicken marinate for 20-30 minutes.
  • Preheat the oven to 400 degrees Fahrenheit and place an oven-safe wire rack on top of a baking sheet.
  • Once done marinating remove the chicken from the refrigerator and place the chicken on the rack and bake for 25-30 minutes or until the core temperature of the chicken is 165 degrees Fahrenheit and the thighs are golden brown.
  • Remove from oven and plate and sprinkle with chopped parsley if desired.
  • Serve with your favorite sides.

Notes

  1. Easily double this recipe to make more for a larger crowd.
  2. Serve with some of your favorite side dishes, see some of my favorites above.
  3. Make sure that you marinate these for 30 minutes to get that flavor.
  4. Chicken will be done at 165 degrees F. It is best using an internal kitchen thermometer.
  5. These can be frozen, see above on how to do that.
  6. You can use other spices for this if you'd like.
  7. Make sure you are using bone in and skin on chicken thighs.
