Ingredients

  • 6 tablespoons all-purpose flour
  • 3 tablespoons hot chocolate mix
  • 1 tablespoon light brown sugar packed
  • ½ teaspoon baking powder
  • Pinch salt
  • ¼ cup milk
  • 1 tablespoon unsalted butter melted
  • ½ teaspoon vanilla
  • 1 ½ tablespoons mini chocolate chips
  • ¼ cup mini marshmallows divided
  • Whipped cream for garnish
  • Chocolate sauce for garnish
  • Dehydrated marshmallows for garnish

Instructions

  • In a medium-sized bowl, stir together the flour, hot chocolate mix, brown sugar, baking powder, and salt until combined.
  • In a small bowl, stir together the milk, melted butter, and vanilla.
  • Add the wet ingredients to the dry and stir together until combined well.
  • Next, fold in the chocolate chips and half of the mini marshmallows.
  • Spray 2 10-12 ounce microwave-safe mugs with non-stick cooking spray.
  • Add 1/4th of the cake mix to the bottom of each of the mugs. Spread it out some and form a little indent/hole in the center.
  • Split the remaining mini marshmallow between the two mugs and place them into the indents you made.
  • Add another 1/4th of the batter on top of the marshmallows and smooth it out so the marshmallows are covered.
  • Microwave for about 1 minute to 1 minute and 15 seconds until cooked through.
  • Remove from the microwave and let cool slightly before topping with whipped cream, chocolate sauce, dehydrated marshmallows, or mini chocolate chips if desired.

Notes

  1. Toppings are not included in nutritional value.
  2. You can halve this recipe if you just want to make one mug cake.
  3. Leftovers don't keep well, so only make these when you're ready to enjoy them.
  4. You can add other toppings to your cake if you'd like, sprinkles, regular marshmallows, hot fudge, etc.
  5. It's totally normal for the cake to start to rise above the rim of the mug while it's in the microwave cooking. Just make sure to use a 10-ounce mug, or one that's larger so the cake doesn't overflow out of the mug.
  6. The marshmallows in the center are optional, but highly recommended not just for flavor but for moistness.
