Strawberry Overnight Oats

- ½ cup sliced strawberries stems removed, plus more for serving
- 1 cup whole milk
- 2 Tablespoons honey plus more for serving
- ½ teaspoon vanilla extract
- 1 cup old fashioned oats
- 2 teaspoons chia seeds
- 4 Tablespoons strawberry preserves
In a blender or a tall glass with an immersion blender add the sliced strawberries, milk, honey, and vanilla extract and blend until smooth with no lumps of strawberry.
Nex add the oats and chia seeds into a large bowl.
Add the strawberry milk mixture into the bowl, stir to combine. Cover the bowl with plastic wrap and place in the refrigerator for at least 4 hours or overnight, until the oats are softened.
To assemble, add ¼ of the oat mixture into the bottom of two mason jars, glasses or bowls.
Add 2 Tablespoons of strawberry preserves on top of the oats.
Then add the remaining oats on top of each serving.
Serve with more fresh sliced strawberries on top and a drizzle of honey if desired.
- Make sure that you are using old fashioned oats.
- You can double this recipe to make a bigger batch.
- These need to sit for at least 4 hours, but overnight is best and they are more tender.
- You can store these for up to 5 days.
- We do NOT recommend freezing this recipe.
- Other additions can be added to your oats, see above for some ideas.
- You can use other milk, we just usually use whole as it is a richer flavor.
