Rice Krispie Peanut Butter Balls

A nostalgic holiday recipe, these Rice Krispie Peanut Butter Balls are super easy, tasty and great for parties, gift giving and more.

Ingredients

  • 3 cups Rice Krispies cereal crushed slightly
  • 1 cup creamy peanut butter melted
  • 1 cup powdered sugar
  • ½ cup unsalted butter melted
  • 1 cup chocolate candy melting wafers or chocolate chips for coating
  • Vegetable shortening or coconut oil optional

Instructions

  • Prepare a large baking sheet with parchment paper.
  • Add peanut butter and melted butter to a large mixing bowl, mix until creamy.
  • Add powdered sugar to peanut butter mixture in batches, mixing well.
  • Gently fold in Rice Krispies cereal into mixture.
  • Using Tablespoon-sized cookie scoop, scoop mixture and roll into balls.
  • Place the balls onto prepared sheet pan, then refrigerate for at least 30 minutes.
  • Melt chocolate wafers or chips in a heat-safe bowl in the microwave for 30 seconds, then in 15-minute increments, stirring in between, until smooth. Add the optional shortening or coconut oil to the chocolate to help make it smooth.
  • Poor melted chocolate into a glass jar.
  • Using toothpicks/skewer or a fork, dip each ball into melted chocolate until coated, them place back onto prepared sheet pan.
  • Refrigerate for an additional 20 minutes to set coating, then serve.

Notes

  1. We like to crush our Rice Krispies slightly to give it a more blended texture.
  2. Easily double this recipe to serve more people or to save for later.
  3. These are great for parties and holiday treat boxes.
  4. These can be frozen, see above on how to do that.
  5. You can use Corn Flakes in place of Rice Krispies if you wish.
  6. If you want to use chunky peanut butter, go for it! It adds a little more crunch to each ball.
  7. We prefer to use chocolate melting wafers for this but you can also use a high quality semi-sweet chocolate chip as well.
  8. DO NOT forget the freezer and refrigeration time.
