Chicken Sausage & Vegetable Sheet Pan Meal

Servings: 6 people
- 1 large zucchini sliced and cut in half
- 1 small head broccoli
- 1 red pepper diced
- 1 yellow pepper diced
- 1 orange pepper diced
- 3/4 lb green beans trimmed and cut in half if needed
- 2 medium red potatoes cut into 1" pieces
- 3 chicken sausage links sliced
- 1/3 cup olive oil
- 2 tsp paprika
- 1 Tbs parsley
- 1 Tbs oregano
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp pepper
- Fresh chopped parsley optional
Preheat oven to 375.
Line a large rimmed baking sheet with tin foil and spray with non-stick cooking spray.
Add your vegetables to baking sheet and drizzle with olive oil and stir around to coat.
Sprinkle with seasonings and stir around again to coat.
Place in oven and bake for 20 minutes, then stir to ensure even cooking.
Bake for another 10-20 minutes checking for doneness after 10 minutes.
Remove from oven and sprinkle with fresh chopped parsley if desired.
