Peanut Butter Banana Bread

A delicious flavor combination, this Peanut Butter Banana Bread is super moist, flavorful and topped with chocolate chips for an extra punch of flavor.

Ingredients

  • 1 cup ripe bananas about 3 large
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • ½ cup creamy peanut butter
  • ¼ cup oil vegetable or canola
  • ¼ cup applesauce
  • 2 Tablespoons sour cream
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1/3 cup chocolate chips optional

Instructions

  • Preheat oven to 325 degrees F and line a 9x5-inch loaf pan with parchment paper. You can also simply spray it with floured baking spray instead.
  • In a large mixing bowl add the bananas, sugar, brown sugar, and peanut butter.
  • Mix with a hand mixer until the bananas are mashed well and combined nicely with the other ingredients.
  • Add the oil, applesauce, sour cream, eggs, and vanilla and mix until well combined.
  • Add the flour, baking soda, and salt, and mix until just combined. Do not over mix, a few dry streaks are fine.
  • Pour the batter evenly into your loaf pan and sprinkle the chocolate chips over the top.
  • Bake for about 50-60 minutes until a toothpick inserted in the middle comes out clean.
  • Remove the bread from the oven and let the bread cool in the pan for about 10 minutes before removing to a wire cooling rack to finish cooling before cutting.

Notes

  1. If you don’t want to use applesauce, simply replace it with equal amounts of additional oil.
  2. The peanut butter flavor is more prominent after the bread is totally cooled.
  3. Use creamy peanut butter that’s not all natural. Using all natural or chunky peanut butter will make your bread too dry.
  4. This recipe can be frozen, see above on how to do that.
  5. The chocolate chips are optional, use them or not. If you do you can use any of your favorite flavors.
  6. If you cut the bread while it’s still hot it will fall apart.
  7. Lining with parchment paper will create the easiest removal of the bread.
  8. Use a knife to run along the edges of your loaf pan if the bread is sticking and not coming out nicely.
