Preheat the oven to 325 degrees F. Line a 9x13-inch baking dish with parchment paper, set aside.
In a large bowl, add the flour, butter, powdered sugar, and salt, then mix until combined.
Once mixed, press the crust ingredients into the prepared baking dish and bake for 22-24 minutes until the very edges just slightly golden brown.
Remove the crust of the oven and with a fork, poke holes all over, making sure not to go all the way through the crust. Set aside and begin to make the filling.
In a large bowl add the granulated sugar and flour, whisk to combine.
Then, add the eggs and lemon zest, whisk to combine.
Next, add the lemon juice and whisk to combine.
Pour the filling on top of the crust and place in the oven and bake for 25-28 minutes until the bars are set, there should be a slight jiggle right in the center but not much.
Remove from the oven and let cool on the countertop until they become room temperature. Then place in the refrigerator and chill for at least 4 hours or overnight.
Once chilled, take the bars out using the parchment paper to help, dust generously with powdered sugar and cut into bars, serve immediately.
