- 1 cup salted butter softened on the counter for 30 minutes
- 3 ½ cups powdered sugar
- 2 teaspoons vanilla extract
- 3 Tablespoons heavy cream
- ¼ cup rainbow sprinkles
n the bowl of a stand mixer fitted with a paddle attachment, beat the butter on medium-high speed for 3-5 minutes.
Add the powdered sugar, vanilla extract, and beat on low until the powdered sugar is incorporated then beat on a high speed for 3-5 minutes until the frosting is light and fluffy. Do not under beat.
Add the sprinkles and mix until just combined.
Use to frost a cake or cupcakes or enjoy with Graham Crackers or Teddy Grahams for a fun snack.
- Try to choose a sprinkle that doesn’t bleed into things. Rainbow jimmies are my recommendation.
- Use a larger frosting tip to pipe, see suggestions above
- This can be made ahead of time, see above on suggestions on how to do that.
- Easily double this recipe to decorate more desserts.
- If you use unsalted butter you will need to add ¼ teaspoon salt to this recipe. You can add it at any point.
- If your butter is super soft you will need more powdered sugar. If it’s too hard it will not mix well. 30 minutes at room temperature seems to be the sweet spot for butter in making frosting.
- This can be frozen, see above on how to do that.
- If you want this to taste slightly more like a can of Funfetti frosting you can sub ¼ cup butter and use shortening in its place.
