- 2 pounds lean ground beef
- 2 medium yellow onions diced
- 1 green bell pepper chopped
- 1 ½ teaspoons salt
- ½ teaspoon pepper
- 3 cloves garlic minced
- 2 Tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1/8 teaspoon cayenne pepper
- ¼ teaspoon cinnamon
- 2 Tablespoons tomato paste
- 1 Tablespoon better than bouillon concentrate or 3 bouillon cubes
- 28 ounces crushed tomatoes undrained
- 1 cup water
- 16 ounces kidney beans rinsed and drained
Optional toppings:
- Sliced green onions
- Sour cream
- Jalapeno slices
- Shredded cheddar cheese
- Corn chips or Fritos
Over medium heat in a large pot, add the beef, onions, bell pepper, salt and pepper.
Stir, breaking up the beef as you cook until the meat is cooked through.
Add the garlic and stir another minute. Drain about half of the liquid in the pot.
Add the rest of the seasonings (chili powder, cumin, paprika, oregano, cayenne pepper, and cinnamon) and stir to evenly coat the meat. Cook an additional minute.
Add the tomato paste and bouillon and stir.
Pour in the tomatoes, water and kidney beans and stir. Bring to a simmer and reduce the heat to low. Simmer, stirring occasionally for at least 1 hour or up to 3 for maximum flavor.
Serve with optional toppings.

- You can make this spicier by adding more cayenne pepper and swapping the green bell pepper out with jalapeno.
- You will want to simmer this as long as you can, 1 hour minimum but 3 hours is best.
- Use lean ground beef about 80/20 as you will still want some fat in the recipe.
- This can be made in advance and stored in the refrigerator then reheated on the stove.
