Preheat the oven to 225 degrees F. Line a baking sheet with parchment paper, set aside.
Place the sugar, brown sugar, cinnamon, and salt in a medium-sized bowl.
Whisk together to combine, set aside.
In a large bowl add the egg white, water, and vanilla.
Whisk together until light and foamy, about 2 minutes.
Add the pecans to the bowl. Stir until they are coated in the egg white.
Add the sugar mixture and stir until everything is coated.
Pour out the pecans onto the baking sheet in an even layer.
Bake for 60 minutes, stirring the pecans every 15 minutes.
Remove from the oven and let cool completely on the baking sheet and enjoy.
