Ingredients

  • 1 cup old fashioned oats
  • 2/3 cup coconut flakes sweetened or unsweetened
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed
  • 1/3 cup honey
  • 1/2 cup mini chocolate chips
  • 1/2-1 tsp cinnamon
  • 1 tsp vanilla

Instructions

  • Place all ingredients in bowl and stir to combined.
  • Cover and replace in refrigerator for about 30 minutes to stiffen up slightly.
  • Remove from refrigerator and shape into about 1"- 1 1/2" balls, serve immediately or keep stored in refrigerator until ready to snack on.
