Ingredients

  • 1 cup milk
  • 2/3 cup quick-cooking oats
  • 2/3 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 eggs
  • 2 teaspoons butter melted
  • 1 teaspoon vanilla extract
  • 1/4 cup milk

Instructions

  • Heat milk in microwave for about 2 minutes until bubbling slightly then pour over oats and set aside to soak up the liquid.
  • Meanwhile in medium bowl whisk together flour, brown sugar, baking powder, salt, and cinnamon until combined.
  • In another bowl whisk together eggs, butter and vanilla extract until combined then whisk in milk.
  • To your dry ingredients add your egg mixture and oat mixture and stir until combined.
  • Heat a non-stick frying pan over medium-high heat and drop about 1/3 cup of your batter into pan and cook about 2-3 until bubbles form on top then flip and cook an additional 2-3 minutes.
