With graham crackers, chocolate cream, whipped cream and more chocolate - this Chocolate Icebox Cake is sweet, satisfying and easy!

Ingredients

  • 8 ounce package cream cheese softened to room temperature
  • ½ cup powdered sugar
  • ½ cup cocoa powder
  • 1 teaspoon vanilla extract
  • 16 ounces whipped cream divided
  • About 15 graham crackers
  • Chocolate fudge sauce for garnish (optional)
  • Mini chocolate chips for garnish (optional)

Instructions

  • n a large bowl, beat the cream cheese, powdered sugar, cocoa powder, and vanilla extract until smooth.
  • Fold 2/3rds of the whipped cream into cream cheese mixture until just combined, set aside the remaining 1/3rd.
  • Spread a very thin layer of the chocolate cream mixture into the bottom of an 8x8-in baking dish.
  • Place a layer of graham crackers across the top of the cream layer, some may need to be split in half to fit.
  • Spread half of the remaining chocolate cream mixture over the top of the graham cracker layer.
  • Repeat the layering process until you have 3 full layers of graham crackers.
  • Spread the remaining whipped cream across the top of the cake.
  • Cover and refrigerate the baking dish for 4-6 hours or overnight for the graham crackers to soften.
  • Garnish with fudge and mini chocolate chips/ Slice and serve. Enjoy!

Notes

  3. I suggest using graham crackers but other options to try to switch it up are given above.
  4. The chocolate fudge sauce and mini chocolate chips are optional.
  5. This can be frozen, see above on how to do that.
  6. Make sure that this chills for at least 4-6 hours if not overnight.
  7. This is a great make ahead dessert for gatherings.
