Bake the tater tots according to package directions.
While the tater tots are baking, shred the cheese into a bowl, set aside.
Meanwhile, heat a large frying pan or skillet over medium heat.
Add the butter to the pan and melt. Add sausage patties and brown for 3 minutes per side. Remove from the pan and set aside.
Then add the bacon to the pan and cook until your desired crispness. Remove from the pan and set aside on a paper towel lined plate. Remove all but 1-2 tablespoons of bacon drippings from the pan.
Next, add the tomato, onion, and diced bell pepper to the pan. Sauté for 3 minutes.
Add eggs, milk, salt, and pepper to a mixing bowl and whisk. Pour into the pan and scramble the eggs.
Once eggs are mostly cooked, add shredded cheese. Stir and cook for 3 more minutes.
Heat the oven to 400 degrees F.
Heat the tortillas in the microwave for 30 seconds to soften.
Slice the sausage patties in half.
Drizzle picante sauce down the center of each tortilla.
Add 2 of the sausage patty halves. Lay a strip of bacon over the patties,
Then top with tater tots.
Lastly top with 2-3 large spoonfuls of the scrambled egg mixture leaving 1-inch of space at each of the sides of the tortilla.
Fold the ends of the tortilla over the center. Fold one side of the tortilla over the center. Roll tightly to the other side.
Place into the oven and bake for 7 minutes.
Serve with more picante sauce if desired and enjoy!
