Ingredients

  • 2 cups frozen tater tots
  • 8 ounce block cheddar cheese
  • 2 Tablespoons butter
  • 6 breakfast sausage patties
  • 6 slices bacon
  • 2 roma tomatoes diced
  • ½ white onion diced
  • 1 green bell pepper diced
  • 6 eggs
  • ¼ cup milk
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 6 burrito size flour tortillas
  • Picante sauce

Instructions

  • Bake the tater tots according to package directions.
  • While the tater tots are baking, shred the cheese into a bowl, set aside.
  • Meanwhile, heat a large frying pan or skillet over medium heat.
  • Add the butter to the pan and melt. Add sausage patties and brown for 3 minutes per side. Remove from the pan and set aside.
  • Then add the bacon to the pan and cook until your desired crispness. Remove from the pan and set aside on a paper towel lined plate. Remove all but 1-2 tablespoons of bacon drippings from the pan.
  • Next, add the tomato, onion, and diced bell pepper to the pan. Sauté for 3 minutes.
  • Add eggs, milk, salt, and pepper to a mixing bowl and whisk. Pour into the pan and scramble the eggs.
  • Once eggs are mostly cooked, add shredded cheese. Stir and cook for 3 more minutes.
  • Heat the oven to 400 degrees F.
  • Heat the tortillas in the microwave for 30 seconds to soften.
  • Slice the sausage patties in half.
  • Drizzle picante sauce down the center of each tortilla.
  • Add 2 of the sausage patty halves. Lay a strip of bacon over the patties,
  • Then top with tater tots.
  • Lastly top with 2-3 large spoonfuls of the scrambled egg mixture leaving 1-inch of space at each of the sides of the tortilla.
  • Fold the ends of the tortilla over the center. Fold one side of the tortilla over the center. Roll tightly to the other side.
  • Place into the oven and bake for 7 minutes.
  • Serve with more picante sauce if desired and enjoy!
