Easy Skillet Baked Gnocchi

With minimal ingredients, ths Easy Skillet Baked Gnocchi is saucy, cheesy and a deliciously easy weeknight meal.

Ingredients

  • 2 Tablespoons olive oil
  • 4 cloves garlic sliced or minced
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 14 ounce can diced tomatoes
  • 2 cups fresh spinach roughly chopped
  • ½ cup ricotta cheese
  • 16 ounce package shelf-stable or refrigerated gnocchi
  • 1 ½ cups marinara sauce
  • 4 ounces fresh mozzarella sliced
  • Fresh basil for garnish
  • Crushed red pepper flakes optional

Instructions

  • Preheat oven to 400 degrees F. Heat a large (10” or 12”) oven-safe skillet over medium heat. When hot, add olive oil and garlic. Cook until fragrant, about 1 minute.
  • Add diced tomatoes, oregano and salt. Stir together and cook for about one minute.
  • Add the spinach and ricotta to the skillet. Stir together and cook for another minute.
  • Turn heat to medium-low. Stir in the gnocchi and then the marinara sauce.
  • Top with sliced cheese. Turn off burner.
  • Place skillet in oven and bake 23 - 26 minutes, until gnocchi is soft and cheese is bubbly and browning.
  • Remove skillet from oven, garnish with basil. Sprinkle with red pepper flakes if desired.
  • Serve warm.

Notes

  1. You can swap our marinara sauce for your favorite pasta sauce.
  2. If you don't have or want to use fresh mozzarella you can use shredded from the block mozzarella.
  3. Easily add some meat to this recipe, see above on how to do that.
  4. I do not recommend freezing this dish.
  5. Add some vegetables to this, see above on some ideas.
  6. You can use frozen gnocchi but make sure that you thaw it before for roughly 30 minutes.
  7. Your gnocchi does not need to be cooked beforehand.
