Ingredients

  • ¾ cup light brown sugar packed
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons onion powder
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • Pinch of cayenne pepper
  • 6 boneless skinless chicken breasts
  • 12 slices bacon not thick cut
  • Fresh chopped parsley for garnish optional

Instructions

  • Preheat the oven to 375 degrees F. Spray 2 9x13-inch baking dishes with non-stick cooking spray, set aside.
  • In a large shallow bowl stir together the brown sugar, garlic powder, onion powder, salt, pepper, and cayenne.
  • One at a time, place each chicken breast into the brown sugar mixture to coat the outside, making sure to gently press the mixture in so it sticks to the chicken.
  • Repeat with remaining chicken and place three coated pieces of chicken into one of the baking dish and three into the other.
  • Wrap each chicken breast with two slices of bacon, make sure to tuck the ends under the chicken. Place it back into the baking dish and repeat with the remaining chicken and bacon.
  • Try to make sure that the chicken breasts are not touching each other in the baking dishes, this helps that they do not get stuck together and the bacon will get crispy.
  • Sprinkle the remaining brown sugar mixture over top of each piece of chicken.
  • Bake for 30-40 minutes, until the bacon is browned and an internal temperature reaches 165 degrees F. If the chicken is done but the bacon isn’t browned enough, turn on the broiler and broil on high until you reach your desired brownness. Watch carefully as it will burn.
  • Remove from the oven and garnish with parsley if desired and serve.

Notes

  1. Use some of the pan drippings to drizzle over the top for some more flavor.
  2. Make sure you DO NOT use thick cut bacon.
  3. You can use chicken thighs for this recipe, see above on how to do that.
  4. Use some of your other favorite seasonings in the brown sugar mixture such as cajun seasoning or BBQ seasoning.
  5. Make sure that the internal temperature is 165 degrees F.
  6. If your bacon is not as crisp as you like it, you can broil it on high until it is. Just keep an eye on it or it will burn.
  7. Make sure to use two pans for this recipe, this helps the bacon get crispy as we do not want the chicken touching.
  8. This can be frozen, see above on how to do that.
