Fried Green Beans

Ingredients

  • 1 pound fresh green beans ends trimmed
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon granulated sugar
  • ½ teaspoon kosher salt plus more for sprinkling
  • 1 cup cold beer we use a lager
  • 1 large egg well beaten
  • Oil for frying
  • Dipping sauces optional

Instructions

  • Preheat a deep fryer or a heavy bottom skillet with about 4 inches of cooking oil to 375 degrees F.
  • Add the green beans to a large bowl and toss with the cornstarch. Tossing in the cornstarch will help the batter stick to the beans while cooking.
  • To make the batter, whisk together the flour, baking powder, sugar, and salt in a large bowl.
  • Whisk in the beer and egg, until smooth.
  • Shake off any excess cornstarch and then add the green beans to the bowl with the batter, coat the green beans in the batter.
  • Letting the excess batter drip off into the bowl, add the green beans to the hot oil one at a time. If using a deep fryer, shake the basket as you add them, so they don’t stick together. If using a skillet, stir well to make sure they are separated. Make sure to fry in batches to not overcrowd the pan or deep fryer
  • Fry for 4-5 minutes until golden brown. Occasionally stirring or shaking, so the beans brown evenly on all sides.
  • Take the green beans out of the oil and drain on a paper towel lined plate.
  • Then place the beans on a wire rack over a baking sheet and sprinkle with more salt to taste.
  • Repeat with remaining green beans and serve immediately with your favorite dipping sauce.
