Vanilla No Bake Cookies

These Vanilla No Bake Cookies are so easy to make and have the perfect balance of flavor. Sweet but not too sweet and the best texture, you can't go wrong!

Ingredients

  • ¾ cup salted butter
  • 2 cups granulated sugar
  • cup whole milk
  • ½ teaspoon vanilla extract
  • 4 cups 1-minute oats
  • ¼ cup powdered milk
  • 3.4 ounce box instant cheesecake or vanilla pudding unprepared
  • Sprinkles optional topping

Instructions

  • Line a large baking sheet with parchment paper and set aside.
  • In a large saucepan, add the butter, sugar, and milk over and cook on medium-high heat.
  • Bring to a rolling boil and boil for 1 minute stirring constantly.
  • Remove from heat then add in the vanilla, oatmeal, powdered milk, and dry pudding mix.
  • Stir quickly until fully combined.
  • Use a medium cookie scoop or your mixing spoon to drop the mixture onto parchment paper.
  • Top with sprinkles, if desired.
  • Allow the cookies to sit for 1 hour to firm up.

Notes

  1. Be sure to only use quick oats for this recipe
  2. You can freeze these cookies, see my tips above. 
  3. Depending on the size of your cookies, you may end up with more or less than 24 cookies.
  4. You can double this recipe very easily to serve more cookies. 
  5. Don't try to make these cookies when it's humid or they won't set right. If you must, then chill the parchment paper or  chill the cookies to help them set up.
  6. Make sure to use Instant Pudding mix, not Cook and Serve. 
  7. You can swap out the pudding flavors for other choices. 
  8. If you don't have powdered milk, you can use powdered coffee.
