Candied Sweet Potatoes

Ingredients

  • 2 pounds sweet potatoes
  • ½ teaspoon kosher salt
  • 8 Tablespoons unsalted butter
  • 1 cup light brown sugar packed
  • ½ cup molasses
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger

Instructions

  • Preheat the oven to 375 degrees F. Spray a 9x13-inch baking pan with non-stick cooking spray, set aside.
  • Peel and cut sweet potatoes into ½ inch thick slices. Place the potatoes into the baking dish and sprinkle with the salt, set aside.
  • In a small saucepan, add the butter, brown sugar, molasses, cinnamon, nutmeg, and ginger. Place on the stove over medium-low heat, stir occasionally. Bring to a simmer, simmer for 2 minutes stirring occasionally.
  • Pour mixture over the potatoes making sure all the exposed potatoes are covered in the sauce.
  • Cover with foil, bake for 30 minutes.
  • Take the foil off, stir, and bake uncovered for an additional 30 minutes.
  • Let cool for 10 minutes before serving. Liquid will thicken as it cools.

Notes

  1. Make sure that you are using sweet potatoes for this recipe and not yams.
  2. These can be frozen, see my tips above on that.
  3. You can half or double this recipe deepening on how many people you are serving.
  4. You do not have to pre-bake or boil the potatoes. They will bake long enough to become tender.
  5. Serve these with so many different dishes, see some of my suggestions above.
  6. If you want to add a little crunchiness, add some chopped pecans to the dish.
  7. Make sure that you are cutting all the potatoes the same thickness. This will help ensure they cook properly.
  8. If you want a richer flavor, use dark brown sugar.
  9. The syrup/sauce with thicken as it sits.
