Easy, fluffy and with a hint of banana these Banana Pancakes are a quick and delicious morning time meal that takes minimal ingredients and whips up in a flash.
Servings: 7 pancakes
- 1 cup flour
- 1 Tbs sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1 tsp vanilla
- 1 egg room temp
- 1 large banana mashed
- Cooking spray or butter
In medium bowl whisk together flour, sugar, baking powder, baking soda and salt.
In another bowl whisk together buttermilk, vanilla, egg and banana until combined.
Whisk in your wet ingredients into your dry ingredients until just combined.
Heat a skillet over medium heat and spray with non-stick cooking spray or melt butter in pan.
Add about 1/4 cup of batter to pan and cook for 2-3 minutes until you see bubbles forming on top and then flip.
Cook again for 2-3 minutes and then serve.
