Shredded Brussel Sprout Harvest Salad
Shredded Brussel sprouts are combined with apples, walnuts, cranberries and parmesan then drizzled with a tangy maple balsamic dressing.
Servings: 6 people
- 1 1lb pkg brussel sprouts, shredded
- 3 Tbs brown sugar
- 2/3 cup chopped walnuts
- 2/3 cup dried cranberries
- 1 apple cored and diced
- 1/2 cup shredded parmesan cheese
- 1/4 cup olive oil
- 1 tsp dijon mustard
- 2 tsp balsamic vinegar
- 2 tsp maple syrup
- Salt and pepper
Add shredded brussel sprouts to large pan with oil and brown sugar and heat on medium heat for about 8-10 minutes or until bright green and tender, remove from heat and place in large bowl.
To make your dressing, mix all ingredients together in bowl and whisk until combined, set aside.
Add your walnuts, cranberries, apples and parmesan to brussel sprouts and pour with dressing, toss to coat.
