Bisquick Quiche

Ingredients

  • ½ pound uncooked bacon diced
  • 1 small onion diced
  • 2 cups whole milk
  • 1 cup bisquick baking mix
  • 6 large eggs
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • 1 ½ cups freshly shredded cheddar cheese

Instructions

  • Preheat the oven to 350 degrees F and grease a 9-inch pie plate with nonstick cooking spray, set aside.
  • In a large skillet over medium heat, add the bacon and sauté until crisp. Remove the bacon from the pan onto to a paper towel to drain. Discard all but one Tablespoon of bacon grease.
  • To the pan with the reserved grease, add the diced onion and sauté until tender– about 3 minutes. Remove the pan from the heat and set aside.
  • In a large bowl, whisk together the milk, bisquick baking mix, eggs, salt, pepper, and thyme.
  • Add the cooked bacon and onion to the bottom of the prepared pie plate.
  • Pour the egg mixture to the prepared pie plate and top with shredded cheddar.
  • Place in the oven and bake for 40-45 minutes, or until the center no longer jiggles when shaken.
  • Remove from the oven and allow the quiche to cool for about 10 minutes before serving.

Notes

  1. This is a fun family recipe that whips up in no time and easily adaptable.
  2. You can switch up the vegetables, meat and cheese, see suggestions above.
  3. You DO NOT need a pie crust for this recipe - the bisquick acts as the crust.
  4. Make sure that you do grease the pie plate before baking.
  5. This can be frozen, see above on how to do that.
  6. Make sure that after you cook the bacon you discard all but 1 Tablespoon of the bacon grease.
  7. If you are going to use other vegetables, saute them before adding to the quiche mixture.
  8. This is great for bring along parties and brunches.
