Mexican Pinwheels

Mexican Pinwheels are an incredibly easy appetizer, snack or light lunch. They're bursting with Mexican flavor and are insanely delicious, you can't stop at just one.

Ingredients

  • 8 ounces cream cheese softened
  • ¼ cup sour cream
  • 1 ½ cups shredded cooked chicken
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions thinly sliced
  • 2 tablespoons finely chopped green bell pepper
  • 2 tablespoons red bell pepper
  • 2 tablespoons chopped fresh cilantro
  • 1 ½ tablespoons taco seasoning
  • 4 burrito-sized tortillas
  • Salsa for serving optional
  • Guacamole for serving optional

Instructions

  • In a large bowl, beat the cream cheese and sour cream together with a hand mixer until smooth.
  • Add the chicken, cheddar cheese, green onions, green bell pepper, red bell pepper, cilantro, and taco seasoning together. Mix until combined.
  • Place a tortilla on a clean work surface and spread 1/4th of the filling onto the tortilla, leaving about ½ inch border along the edge.
  • Roll tightly into a to form a log. Repeat with the remaining tortillas and filling.
  • Wrap the logs tightly in plastic wrap, fold the ends of the plastic wrap under. Place in the fridge for at least 4 hours, or best overnight.
  • Unwrap the pinwheels from the plastic. Cut into ½ inch slices, and serve with salsa and guacamole, optional.

Notes

  1. You can make these vegetarian if desired.
  2. These can be frozen, see above on how to do that.
  3. This recipe is easy to double or triple to serve more, or have more to freeze for later.

  6. Using a serrated knife to cut the pinwheels makes cutting easier. 
  7. These need a minimum of 4 hours in the refrigerator to meld the flavors, but they're best if they can rest in there overnight.
