Corned Beef Quesadilla

  • 1 can corned beef
  • 8 flour tortillas
  • 4 Tbs Thousand Island Dressing
  • 1 cup sauerkraut well drained
  • 2 cup swiss cheese


  • Add corned beef to fry pan and fry until warm and gently crisp. Set aside.
  • On 1 tortilla spread 1 Tbs of Thousand Islands dressing.
  • On another tortilla sprinkle 1/4 cup swiss cheese, next add corned beef, then 1/4 cup sauerkraut then another 1/4 cup swiss cheese. Repeat with remaining tortillas.
  • In fry pan fry on medium-high heat quesadilla until golden and flip and do the same for the other side.
  • Cut into triangles and serve with extra Thousand Islands for dipping.
