Corned Beef Quesadilla
Want a new spin on the traditional Ruben Sandwich? These Corned Beef Quesadillas are all the flavor but in smaller bites!
- 1 can corned beef
- 8 flour tortillas
- 4 Tbs Thousand Island Dressing
- 1 cup sauerkraut well drained
- 2 cup swiss cheese
Add corned beef to fry pan and fry until warm and gently crisp. Set aside.
On 1 tortilla spread 1 Tbs of Thousand Islands dressing.
On another tortilla sprinkle 1/4 cup swiss cheese, next add corned beef, then 1/4 cup sauerkraut then another 1/4 cup swiss cheese. Repeat with remaining tortillas.
In fry pan fry on medium-high heat quesadilla until golden and flip and do the same for the other side.
Cut into triangles and serve with extra Thousand Islands for dipping.
