Light and fresh Caprese Tortellini Salad is full of cheese tortellini, diced tomatoes, blak peppers, roasted red peppers and basil. Drizzled with a delish balsamic sauce!

Ingredients

  • 1 19 oz pkg tortellini, prepared according to pkg directions
  • 2/3 cup silced olives
  • 3/4 cup mozzarella pearls
  • 2/3 cup chopped roasted red pepper*
  • 1/2 cup chopped fresh basil
  • 3/4 cup quartered diced grape tomatoes

BALSAMIC VINAIGRETTE

  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 clove garlic minced
  • 1 tsp honey
  • Salt and pepper

Instructions

  • Rinse your cooked under cold water until cook then transfer to large bowl.
  • Stir in your olives, mozzarella, red peppers, basil and tomatoes until combined.
  • In small bowl whisk together all your vinaigrette ingredients and pour over pasta and toss to coat.
  • Serve chilled.

Notes

I find my roasted red peppers in a jar packed in water at the grocery store.
