Strawberry Banana Ice Cream Topping

- 1 lb strawberries stems taken off and diced
- 1 banana chopped
- Heaping 1/3 cup sugar
- 1/3 cup + 3 Tbs water
- 1 Tbs lemon juice
- 2 tsp cornstarch
In pan add your strawberries, banana, sugar, 1/3 cup + 2 Tbs water and lemon juice. Bring to boil and reduce heat and let simmer for about 20 minutes.
Once reduced mix your cornstarch and 1 Tbs water together and stir into your syrup mixture and let simmer for few minutes more until mixture coats the back of a spoon.
Spoon into 2 8 oz jars and refrigerate until cooled.
Serve over your favorite ice cream.
