Strawberry French Toast Muffins
French toast is turned into muffins and baked until golden, then drizzled with a strawberry cream glaze.
Servings: 12 muffins
- 1 loaf white bread cubed
- 2 cups skim milk
- 2 pkg Carnation Breakfast Strawberry Powder Drink Mix
- 6 eggs
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 cup powdered sugar
- 1 pkg Carnation Breakfast Essentials Strawberry Powder Drink Mix
- 2-3 Tbs milk
Preheat oven to 350.
Place your cubed bread on a sheet pan and bake for about 10 minutes, stirring halfway through until slightly crisp, remove, add to large bowl and set aside.
In large bowl mix together your milk, Strawberry Carnation Breakfast Essentials Powder, eggs, vanilla and cinnamon.
Pour your milk mixture over your cubed bread and stir, let sit for about 5 minutes or until milk is soaked up.
Liberally spray a 12 count muffin tin with non-stick cooking spray, divide your bread mix evenly among cups.
Bake for about 30 minutes or until center is set and muffins are golden.
Remove from oven and let cool for about 5 minutes before removing to cooling rack.
Meanwhile in small bowl stir together your glaze ingredients, spoon over the tops of your muffins and serve warm.
