Hawaiian BBQ Chicken Sliders

Shredded BBQ chicken topped with pineapple, red onion, cilantro and cheese and baked on slider buns until melty.

Ingredients

  • 1 rotisserie chicken or 2 cooked chicken breasts shredded
  • 1 1/4 cup BBQ Sauce
  • 1 8 oz can crushed pineapple, drained but juices reserved
  • 1/4 cup diced red onion
  • 2 Tbs chopped cilantro
  • 1 1/2 cup shredded Montery Jack or Colby Jack cheese
  • 1 12 ct pkg Hawaiian Rolls
  • GLAZE
  • 4 Tbs butter melted
  • 1-2 Tbs reserved pineapple juice
  • 1/4 tsp garlic powder

Instructions

  • Preheat oven to 350.
  • Split your slider buns in half, place one half in the bottom of a 11x7" or 9x13" baking dish.
  • In bowl add your chicken and BBQ sauce and stir until combined and coated,
  • Spread the chicken on top of the Hawaiian rolls and top with pineapple, onions, cilantro and cheese.
  • Place the other half of the rolls on top of chicken.
  • Mix together your glaze ingredients and brush over tops of rolls, cover with tinfoil and bake for about 30 minutes or until cheese is melted.
