- 5 cups cooked rice
- 1/4 cup Olive oil
- 1 medium onion diced
- 1 cup carrot sliced
- 1 lb chicken diced into bite sized pieces
- 8 eggs beaten
- 1/4 cup milk
- Salt and pepper
- Green onions optional
Start by cooking your rice according to the package directions, we use our rice cooker as it has been a saving grace.
Next in a non-stick pan add olive oil and your chopped carrots and onions and cook over medium heat until tender and translucent, remove from pan.
In the same pan add your chicken and cook until no longer pink and juices run clear, again remove from pan.
Lastly in same pan add your eggs and fry until cooked through.
In a large bowl add your cooked rice, vegetables, chicken and eggs and toss to combined.
Add salt and pepper to your liking and again give it a good stir.
Lastly garnish with some green onions if desired.
