To make your dough add flour, salt and water to a bowl and mix well.
Using your hands mix dough and knead it until it sticks together.
Add your vegetable oil and continue to knead until it becomes smooth and then shape into a ball, cover with a damp paper towel and let rest for one hour.
Meanwhile make your filling, add your chopped cabbage and 1-2 tbs of oil to a pan and sauté until wilted and half it's size.
Add to a bowl and let cool, once cool add your green onion, ginger, garlic, soy sauce and pork and mix together then refrigerate.
Once dough is done resting sprinkle a tiny bit of flour on your work surface (you may not need this) and roll dough out until about 1/8"-1/4" thick.
Using a 3" biscuit cutter cut your dough into rounds.
Take about 1/2 tbs filling and add it to center of dough then bring up the sides and press the center together, then add three pleats on each side, repeat with all dough.
In pan heat oil and add your potstickers and fry until bottoms are golden.
Add water and cover and let steam for about 7-8 minutes to ensure pork cooks.
Remove from pan and serve with soy sauce, sweet and sour sauce, etc.
