Easy, hearty and perfect for breakfast these Oatmeal Pancakes are the perfect morning dish that are quick, flavorful and packed full of deliciousness.
Servings: 7 pancakes
- 1 cup milk
- 2/3 cup quick-cooking oats
- 2/3 cup all-purpose flour
- 2 tablespoons brown sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 eggs
- 2 teaspoons butter melted
- 1 teaspoon vanilla extract
- 1/4 cup milk
Heat milk in microwave for about 2 minutes until bubbling slightly then pour over oats and set aside to soak up the liquid.
Meanwhile in medium bowl whisk together flour, brown sugar, baking powder, salt, and cinnamon until combined.
In another bowl whisk together eggs, butter and vanilla extract until combined then whisk in milk.
To your dry ingredients add your egg mixture and oat mixture and stir until combined.
Heat a non-stick frying pan over medium-high heat and drop about 1/3 cup of your batter into pan and cook about 2-3 until bubbles form on top then flip and cook an additional 2-3 minutes.
