- 1 lb. ground beef
- 5 cups frozen tater tots
- 1 cup onion chopped
- 1 green bell pepper chopped
- 1 1 oz. packet of taco seasoning
- 1 cup red enchilada sauce
- 1 10 oz can of tomatoes and chilies
- 1 15 oz can of black beans, drained and rinsed
- 1 12 oz bag frozen corn
- 3 cups Mexican blend shredded cheese
- optional sour cream and cilantro for garnish
Preheat oven to 375 degrees and spray a 9x13 casserole dish with non-stick spray
In a large skillet over medium heat cook onions and bell pepper until tender.
Then add the brown beef unit cooked and no longer pink then drain fat and return to skillet.
Combine taco seasoning, tomatoes and chilies, enchilada sauce, black beans and frozen corn to skillet and cook for 10 minutes.
Stir in two cups of cheese and stir until melted
Transfer beef mixture into the casserole dish. Line tater tots across the top and bake for 30-35 minutes.
Remove from oven and sprinkle the remaining cup of cheese over the top. Bake another 5 minutes or until cheese is melted and bubbly. Garnish with cilantro and sour cream if desired.
