  • 1 slice brioche sandwich bread
  • 2 teaspoons salted butter
  • 1 large egg
  • Kosher salt and pepper to taste


  • Using a cookie or biscuit cutter, cut out a 2 & ½ inch to 3-inch hole in the center of the bread, set aside.
  • In a large skillet over medium-low heat, melt the butter and swirl it around the pan. Add the bread and the cutout piece of bread to the skillet. Let cook for 3 minutes.
  • Flip the piece of bread over. Gently place the egg in the center of the hole, making sure not to break the yolk. Season with salt and pepper to taste.
  • Cover and cook for an additional 3 minutes or until the egg whites are set and opaque. Serve immediately.
