Sweet Potato Casserole Recipe

- 2 ½ cups mashed sweet potatoes
- ¾ cup brown sugar packed
- 2 tablespoons unsalted butter
- 2 eggs
- 1 cup milk
- ½ teaspoon salt
Topping:
- ½ cup brown sugar
- ¾ cup all-purpose flour
- 5 tablespoons unsalted butter melted
- ¼ teaspoon salt
- ½ pecans chopped
Preheat the oven to 350 degrees. Prepare a 9x13-inch baking dish with cooking spray. Set aside.
In a medium size bowl combine mashed sweet potatoes, butter, eggs, and salt with a hand mixer.
Once that is fully combined (about 3 minutes) add in your milk and brown sugar and mix again until fully combined.
Pour mixture into a sprayed baking dish., place in the oven and bake for 25 minutes.
While it bakes, make streusel topping. In a small bowl add all topping ingredients.
Using a spoon or fork mix until a crumble forms.
Once the sweet potato mixture has baked for 25 minutes, take it out of the oven and evenly sprinkle crumble on top. Place back into the oven and bake for an additional 20 minutes.
Once baked, allow to cool for 10 minutes then serve!
