Pumpkin Chocolate Chip Cookies

Ingredients

  • ½ cup unsalted butter softened
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup pumpkin puree
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ teaspoon pumpkin pie spice
  • 1 cup semi-sweet chocolate chips

Instructions

  • Heat oven to 350 degrees F. Line baking sheets with parchment paper or use a silicon mat. In a large bowl, add the butter and beat until smooth with an electric mixer.
  • Add in both sugars and beat until fluffy.
  • Then add the egg, vanilla extract and pumpkin puree and beat on low speed until combined.
  • In a medium bowl, add the flour, baking soda, cinnamon, pumpkin pie spice and salt and mix together. Gradually add the flour mixture into the wet ingredients and blend on low speed until just combined.
  • Stir in the chocolate chips.
  • Scoop dough using a tablespoon or 1 ½ tablespoon cookie scoop or (heaping tablespoons full) and place 2 inches apart on the prepared baking sheet.
  • Bake for 15-16 minutes or until edges are slightly brown. Remove from oven and let cool on cookie sheet for 2-3 minutes then transfer to wire racks to cool completely.

Notes

  1. You can double this recipe to make more. 
  2. These can be frozen, see my tips above.
  3. Use your favorite chocolate chips for these, for this recipe we use semi-sweet.
  4. You can make your own homemade pumpkin pie spice if you do not have any, see my substitutions above to make that.
  5. Make sure you use pumpkin puree and not pumpkin pie filling.
