  • 16 oz. can refried beans
  • 4 small avocados mashed
  • 1 cup shredded Mexican style cheese
  • 1 bunch green onions diced
  • 2 small tomatoes diced
  • 2.25 oz. can sliced black olives drained

  • In a bowl, and using a mixer, mix together the cream cheese, sour cream and taco seasoning, set aside.
  • In a 9x13 baking dish or serving tray, spread the refried beans on the bottom.
  • Next, carefully layer the avocado on top of the beans, spread evenly.
  • For the third layer, gently spread the sour cream mixture on top of the avocado.
  • Next, layer on the shredded cheese.
  • Sprinkle diced green onions on top of cheese.
  • Layer on the diced tomatoes.
  • Top tomatoes with black olives.
  • Sprinkle on chopped fresh cilantro if desired.
  • Serve with chips or crackers, etc.

  1. We like to use Mexican shredded cheese for this, but feel free to use cheddar or Monterey Jack.
  2. You can swap out the mashed avocados with guacamole if you like.
  3. You can halve this batch to make a smaller portion for only a few people.
  4. We love using Roma tomatoes for this recipe and that is primarily the ones that we use.
  5. You can serve this with tortilla chips, crackers, pita bread, tortillas, etc.
