Ingredients

  • 1 pound lean ground beef
  • 2 Tbs taco seasoning
  • 1/3 cup salsa
  • 1/4 cup water
  • 1/4 cup fresh chopped cilantro
  • 4 burrito sized flour tortillas
  • 1/2 cup nacho cheese sauce
  • 4 to stada shells
  • 1/2 cup nacho cheese sauce
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded lettuce
  • 4 6- inch flour tortillas
  • 2 Tbs unsalted butter

Instructions

  • Place a large skillet over medium-high heat. Once hot, add the ground beef directly to the skillet, break it up and brown it until there is no pink left. Drain off any excess grease or liquid.
  • Add the taco seasoning and mix it into the meat, cook for about 15 seconds until fragrant.
  • Add the salsa, water, and cilantro to the skillet, stir to combine. Let simmer until most of the liquid has evaporated but the mixture is not dry, set aside.
  • We are going to make the crunchwraps and cook them one at a time.
  • On a clean work surface, place one of the burrito sized tortillas. In the center add 1/4th of the beef mixture. Dollop 1/4th of the nacho cheese sauce on top.
  • Place a tostada shell on top of the nacho cheese sauce. Smear 1/4th of the sour cream on top of the tostada. Place 1/4th of the diced tomatoes and 1/4th of the shredded lettuce on the sour cream. Place one of the 6-inch flour tortillas on top.
  • Place another large skillet over medium heat. While the skillet heats, take the bottom larger tortilla, wrap it around while folding the tortilla up the sides to form a package.
  • Coat the skillet with ¼ of the butter and place the folded tortilla, fold side down into the skillet. Be very careful when placing the tortilla so keep the folds folded. Place something heavy on top of the tortilla, I used my spoon rest.
  • Let the tortilla toast for about 2-3 minutes until browned to your liking. Flip it over, place the heavy object back on top and toast an additional 2-3 minutes.
  • Repeat with the remaining tortillas and filling.

Notes

  1. You can use any kind of tortilla you want, we like the flour but you could also use wheat.
  2. Use the leanest ground beef you can get, this produces less grease.
  3. Buy pre shredded lettuce or shred your own, we like to use chopped romaine for these.
  4. You can find nacho cheese sauce at your local grocery store in cans.
  5. If you want to add other toppings in the center of this feel free to do so, olives, jalapeños, avocados are all good choices.
  6. Serve with your favorite dippings sauces like taco sauce, sour cream or guacamole.
